Beef & Barley Soup: Prep time: 15 minutes. Cook time: 45 Minutes. Makes 8 servings. Heat oil in large saucepan on medium-high heat. Add leek and carrot; cook and stir 5 minutes or until tender. Add mushrooms; cook and stir or until lightly browned. Stir in beef and remaining ingredients. Bring to boil. Reduce heat to medium; simmer 30 minutes or until barley is tender.
