The flesh of herring gets a deep mahogany color, and the skin becomes somewhat crunchy after smoking it over Alder chips. Herring is a smaller fish. The end product is a tin filled with enticing bite-sized morsels that look gorgeous when served over spaghetti or straight out of the tin.
